Vegetarian pasta ragu

Vegetarian pasta (like a ragu a la Bolognese)

This is a very simple dish to cook when your fridge is quite empty and you are in a hurry to feed the kids. The wonderful part of it is that it tastes like its meat inside but this is a 100 % meat free dish with some dairy in the recipe.

So what do I need?

  • Carrots 4 pieces of medium size

  • Onion 2 pieces of medium size (white or red)

  • Tomato paste 2 spoons (30ml)

  • Crushed tomatoes 400g

  • Garlic 3 pieces

  • Crème fraiche 250ml

  • Double crème 150ml

  • Estragon 1 spoon 15ml

  • Salt and pepper

  • Olive oil

Ingredienser vegetarian pasta

  • Wash the carrots with water and peel the onion

  • Grate the carrots, onion and garlic on a grater

  • Put on the stove at medium heat and pour a little olive oil in a pan

  • Fry the carrots and onions until they are soft and have become a bit lighter in color

  • Add garlic and tomato puree, let the garlic and tomato puree simmer for a minute

  • Put on some water for the pasta of your choice in a separate saucepan, add salt

  • Pour in the crushed tomatoes and tarragon, salt and pepper, stir

  • Let it cook for a couple of minutes

  • Add crème fraiche and cream, let it simmer

  • Taste and spice it up if necessary

  • Cook the pasta al dente and let it drain in a strainer

  • Pour the drained pasta into the pan with the pasta sauce, let it cook for 2 minutes

  • Serve the pot on the table with a little grated Parmesan on the side and a little tarragon on top

Serve with a salad like a Mozzarella Caprese and some butter fried bread and when it comes to drinks to this dish I prefer a good Chianti and for the kids a glass of milk
